Simple vegetation indices like NDVI are readily available from multiple places, especially now that free satellite data is now available from the EU Copernicus program's Sentinel 1 & Sentinel 2 satellites.
The UK Space Agency (UKSA) supports development of Earth Observation services in the UK, the European Space Agency (ESA) across Europe.

Hello! I'm a Master's student in Environmental Technology at Imperial College London, and as part of my thesis research I'm looking to speak to arable farmers in the UK, to understand which soil properties are most valuable to monitor, and how insights from this kind of data could help solve bigger on-farm problems.
My thesis focuses on using satellite imagery to remotely predict soil properties (e.g. nitrogen and carbon), with the goal being to inform decision making, and remove the need for lab testing or in-field sensors.
